The BBLT — Black Label Bacon Lettuce Tomato

Serves 4
Prep Time: 25 minutes


INGREDIENTS:
1 cup white vinegar
1 teaspoon granulated sugar
1 teaspoon kosher salt
1 small red onion, thinly sliced
1 small jalepeño, seeded and sliced into rounds
1/4 cup mayonnaise
1 lime, juiced
4 ciabatta rolls, split and toasted
8 slices bacon, cooked until crisp
1 medium tomato, slices into rounds
1 head Bibb or Boston lettuce
4 ounces CAMBOZOLA Black Label cheese, sliced into 4 pieces

INSTRUCTIONS :

1. Combine vinegar, sugar and salt in a small microwave safe bowl and heat on high for 2 minutes. Meanwhile, combine onions and jalepeño in another small bowl.
2. Remove vinegar mixture from microwave and pour over onions and jalepeño, covering them completely. Cover the bowl with a lid or plastic wrap and set aside for 15 minutes.
3. In another small bowl, combine the mayonnaise and lime juice and stir until completely mixed.
4. To assemble sandwiches, spread 1 tablespoon of the mayonnaise mixture on each ciabatta roll. Top each roll with a some of the pickled onions and jalepeños, then add a layer of ba-con, lettuce and tomato and finish with a slice of CAMBOZOLA Black Label cheese.
5. Top with the second half of the ciabatta rolls and serve immediately.
