CAMBOZOLA Crostini Sweet Potatoes with Honey and Walnuts

Ingredients:

Olive oil cooking spray
2 small sweet potatoes, sliced
1 teaspoon kosher salt, plus more for sprinkling
4 ounces CAMBOZOLA cheese, sliced
1/2 cup walnuts
1/4 cup pomegranate arils
2 tablespoons fresh sage, minced
2 tablespoons honey

Instructions:

1. Preheat oven to 300 degrees F.
2. Spray sweet potatoes lightly on both sides with olive oil spray and arrange on a rimmed baking sheet.
3. Bake sweet potatoes in oven for 30 minutes, then flip to second side and roast for 30 minutes more, until potatoes are soft and golden on the outside.
4. To assemble the crostini, top each sweet potato with a slice of CAMBOZOLA cheese, wal-nuts, pomegranate and sage.
5. Drizzle with honey and a sprinkle of salt just before serving.
