Montagnolo
A premium cheese with perfect ripeness. Cultivated by hand, the Montagnolo develops its wonderfully delicate creaminess and the characteristic noble gray rind in a gentle cold ripening process. In addition, the blue mold veins on the inside give the soft cheese a distinctive, slightly sweet aroma.

What to expect:
Gray, bloomy and edible exterior. Creamy yellow-white soft interior with several striations of blue mold.
Pairings: Pair it with a red wine or strong beer. Serve it at room temperature with baguette, honeycomb, fresh berries, or salami. Top a steak, burger, or grilled Portobello mushroom for an indulgent meal.

Montagnolo has an elegant tall profile and beautiful natural gray mold exterior. The blue notes become slightly sweet with age. Creamy with a subtle spiciness and a slightly sweet aroma in a noble grey rind.

Montagnolo is lactose-free due to the natural maturation process during cheese-making. Our cheeses are all naturally gluten-free and because we use microbial rennet, they are 100% vegetarian-friendly.
